Useful Civil 3D Training from public website sources
Autodesk staff, Autodesk Reseller staff, and consultants produce a wide range of video content. Some is product sales demo, but a lot of the staff and/or consultant recordings, lists, and channels include useful application training and helpful tips and tricks for Infrastructure Design products.
Content that is significant video training is listed here.

Use a Pasted Surface to Generate Corrected Profile View Labels

Jeff Bartels of Autodesk covers the basics of the Surface Edit Paste command - a way to combine surfaces in Civil 3D.
He employs the tool to create adjusted surface labels in the band style of a typical roadway that includes a bridge over the existing ground.
From the Jeff's YouTube Channel.
and the Civil Imersion blog.
The concepts covered here are very important for the creation of intermediate surfaces often employed in design in Civil 3D.
In other words sometimes it takes more than one surface to create and/or document your design in Civil 3D.
My only caution here is that you'd better carefully manage where all these interactive surfaces are stored in your project.
In Jeff's quick and dirty example the working drawing is the publishing drawing. This can drive you crazy as things get more complicated.

Large Surfaces in Civil 3D? Employ Map FDO for Better Performance

Are Large surface models a performace issue? Need better exhibit graphics or want to match a USGS map?
Jerry Bartels of Autodesk covers the conversion and use of DEM raster surfaces with Map FDO and Map Styles.
From the Jerry's YouTube Channel.
and the Civil Imersion blog.
Covered are the basics of DEM surface conversion and use of that surface data via a Map FDO connection inside Civil 3D.
Keep in mind - A DEM data source in a Civil 3D surface is not the same thing.
Do not take lightly where you put the FDO data sources inside your Civil 3D project.
Map Style thematics and visual display control are different from Civil 3D Style mechanics and are certainly worth learning.

Alan Gilbert of Autodesk explains that given the gutter lines on both sides of a centerline,
you can quickly create a straight graded roadway corridor that ignores a crown.
For example - maybe you must match an existing superelevated road.
from the Civil Imersion blog.
Alan's use of a vanila link subassembly to make a classic AOR subassembly do the work from the targeting is well worth understanding.
Civil 3D Assembly construction seems to often be a form of civil engineering design art.
Autodesk also provides some generic and more elaborate Rehab subassemblies you can also use.
